You need to see your advisor each term in order for you to finish your degree in a timely manner. Many courses are only offered once a year and many are not offered during the summer. Your advisor is aware of the Departmental changes occuring if a course is being moved from Spring to Fall or vice versa.

If you are interested in undergraduate research, consider going away for the summer to do an REU.
